Madurese Vegetable Pickle

The combination between various vegetables and rich spices, with a bit touch of vinegar, makes this vegetable pickle so special ;-).


Ingredients for 3-4 persons:

  1. 2 carrots, peeled, cut in julienstrips
  2. 2 pieces of middle size cucumbers, discard the seeds, cut in julienstrips
  3. 50 gr french beans, thinly sliced
  4. 5 cabbage leaves, thinly sliced
  5. 100 gr or a half cup of beansprouts
  6. 10-15 pcs green bird chilis (add if you like it more spicy)
  7. 10 pcs asian shallots (replace with french shallot if not available, but cut in small pieces)
  8. 2 tbsp sugar
  9. 2 tbsp vinegar
  10. vegetable oil

Spices for the paste:

  1. 2 large red chillies, de-seeded, chopped
  2. 2 cloves garlic, chopped
  3. 2 candlenuts, roughly chopped or crashed
  4. 2 cm fresh/1 inch turmeric or 1/2 tsp ground turmeric
  5. 1 cm/1 tsp fresh ginger
  6. 1 cm/1 tbsp fresh ginger
  7. 1 cm or 1 tbsp galangale
  8. 1/2 tsp roasted dried shrimp paste / terasi (optional)
  9. 1/2 tsp Pepper or 1/4 tsp ground pepper
  10. 1 tsp salt or to taste

Step-by-Step Instructions:

  1. 1Wash, peel (if necessary), cut and slice all vegetable ingredients. Set aside.

  2. 2Put all ingredients for the paste in a blender or food processor and blend until smooth. (If necessery add a little bit oil to help the blending process).

  3. 3Heat 1 tbsp oil in a frying pan and saute the paste. Stirring all the time until fragrant and really cooked.

  4. 4Add the sliced carrots, french bean and cucumber. Stir fry until the vegetables are half cooked.

  5. 5Add the sliced cabbage, bird chillies & shallots. Stir to mix.

  6. 6aAdd the sugar and vinegar and stir to mix.

  8. 7Add the beansprouts and cook shortly until just wilted.

  9. 8Adjust the taste, add salt or sugar if necessary. Serve hot with rice and Fried Chicken.
